These melt-in-the-mouth lovely biscuits have quite a history behind them. They have their origins in a region called Shrewsbury in England, a place where they get their name from.
The grass that grows in Shrewsbury has a special scent. The cattle feed on this grass and their milk is used to make butter. This small town is therefore famous for its butter.
This butter is used to make the iconic Shrewsbury Biscuits.
While it is difficult, or rather impossible to replicate the exact taste of these biscuits, bakeries in Pune have managed to get really close. Here is a recipe from a bakery in Pune:
Ingredients:
Flour (Maida) : 200 gms
Powdered Sugar : 100 gms
Butter (salted) : 150 gms
( Even I couldn’t believe that these lovely biscuits require ONLY three basic ingredients. But it’s true! )
Procedure:
1. Take the butter (room temp) in a bowl and beat it till it turns pale yellow in colour. I usually use a beater to beat it. However, the same can be done with a whisk or a wooden spoon.
2. Add the powdered sugar and beat well till everything is combined.
3. Add the maida to this mixture and mix it with a spatula or a spoon. Once the ingredients start coming together, use your hands to make a dough.
4. Pre-heat your oven at 125 degrees for 10 mins.
5. On a baking sheet or butter paper, roll out the dough and use a cookie cutter to cut it into desired shapes. (If you don’t have a cookie cutter, you can simply use a knife to cut square or diamond shaped biscuits. )
6. Line a baking tray with butter paper and carefully place these biscuits on the tray. (Ensure that you don’t keep the biscuits too close to each other.)
7. Bake them in the oven for 40 mins at 125 degrees. (Heat settings- both sides)
8. Take them out and let them cool for a while.
Your biscuits are now ready to eat!
You can store them in an air tight container. (I’m sure there will be none left to store. They taste so good that you will eat them all!)
